I would have a look at Yokohama Geolanda's A/T S. We have them on Kates Jimny and they work well on and off road, I think they cost us about £70 each. If you got them in 215/75/15 you will gain a little clearance under the diff too.

No I got them from my local independent at what I can only guess was cost price, 72 fitted.

So I have a stock jimny and I'm looking at getting some offroad tyres to put on the standard rims, am I correct in assuming g the largest I can go is 215/75/15? Without a lift or rubbing?

Yes. New tyres will be ok, remould may catch, especially if big tread pattern. wheel spacers will create rubbing issues so best avoided.
