Does anyone see any problems running 205/70R15 Insa Turbo Dakar's on an unmodified Jimny? What Im wondering is, is the substantially increased grip likely to break any of the standard drivetrain parts?!

we had no problems running tyres of that size. We now run massive 215rx15's and these are almost 3" taller .. we have a 2" lift and have no issues with clearance at all.
They will look close, but you should be fine

Isnt really the clearance Im worried about! Its more to do with the Dakars spinning in mud and then catching grip, is it likely to damage the drive components or should they be robust enough to take it?

With any tyre, MT's or not, there is a possibility of the tyres suddenly gripping and then destroying the driveline. I have Goodyear Wrangler MTs on mine and heavily off-road it and have not destroyed any parts due to a heavy right foot yet (parts have worn out however!). So I would say it is down to having a respect for the parts and driving with care - it will then be fine
