If you believe the body shell is in good condition
Then i personally would be looking to do a chassis swap

But I would suggest a full shell inspection all trim off, bumpers and carpet out
To be sure I was putting a good body on the replacement chassis

As I say, I saw 7 or 8, maybe even more, and this was the best. So although I do have an out, I am then back as the start and I have a whole new gamble to take, so I am just not convinced I would be any better off.

You are not convinced that you would be better off?  The car you just bought broke in half.  Yes, I think you can do better than that!

I'm not even going to talk about the possibility of repair.  Here's the thing.  This is not just a little whoopsie.  This could easily have killed you and your child.  Think about that.

Call me a cynic, but many years' experience of dealing with the auto trade tells me that they are not going to give you your money back.  They are planning a quickie bodge and will spend exactly as much time worrying about the integrity of the chassis afterwards as they did when they had their mate do the MOT with one eye closed.  Even if they kind of seem like nice professional people, it cannot be more clear that they do not care about you.  They knew perfectly well the compromised condition of the frame, and they also know that a proper repair is a huge and uneconomic job -- which is why they didn't do it before sale.  If they offer you a refund, it will be because they are terrified that you will sue.  You should grab the money with both hands and RUN.

I say this here about weekly, since that is how often we get new visitors with "I bought this used Jimny that looked fine and now it is broken" stories, but: have any used car evaluated by a third-party inspector before purchase.

Again, it is only by the grace of the Big Guy that you are asking these questions not from a hospital bed -- or the afterlife!  Use this as a learning experience: you now know the value of a prepurchase inspection (PPI).

Bottom line:
Get your money back on this one, in court if necessary, and start your search again with 100£ extra in the budget for that potentially lifesaving PPI.
