Properly done a coolant change WILL get 100% of the old coolant out. If you're only getting 2/3, the system is not being flushed and you can run into issues because if the old & new coolants are not of the same type. Typically there is coolant left in the block & heater circuit, this can be removed by flushing with water.
Drain the coolant and refill with plain water, run the engine until it's warm enough to open the thermostat and circulate the coolant, then drain, refill & repeat until there is no trace of the old coolant. Add half the cooling system capacity of concentrated coolant (not the 50:50 premix/ready to use) and then top up with plain water - this will get you to the 50:50 mix without needing to know how much coolant is left in the block after draining.

A coolant change only gets out about 2/3 of the old coolant, so you need to do it at least twice to get a good effect (replacement of the anti-corrosive components).

Thank you for all the suggestions!
I did a little investigating and found that they had given some mix-matched information about the coolant used in the service, like "long-life Green" but I found in the paperwork on a different page they had put a parts number next to "long life coolant" and when I did a search for that I found the ECstar "super life Blue". I went and had a look at what's in the reservoir and compared with pictures of the green version I'd seen online and it's definitely the blue one they've used. Found a supplier online and ordered some so problem solved!

On our 5 jims, we use the pink long life coolant from ecp, and a proper flush
