It's a shame I'm so far away from you (far south west Cornwall) as I'd really like to use someone who knows Jimnys. I rate my local garage but they're definitely not Jimny specialists

The ABS light can just be due to LED brake bulbs. These usually trigger an intermittent ABS fault unless they have the right inbuilt resistors. Put normal bulbs back in and it's fixed.

I believe the ABS has been completely disconnected but not 100% sure on that

With the one exception of the arb mount it's all just mechanical and therefore relatively straight forward, I'd be rather more concerned if it needed a lot of welding as that's beyond most people to do properly. Sticking with it is the future.

Probably not but there's mot welding and there's repair/restoration welding, they are not the same.
