you might be OK but special tracks size up larger than it says on the sidewall
we've got 3" lift + 1.5" spacers and they fit OK
you could always go for 30" recip trials as a compromise size wise but are pretty good in the mud
the main advantage of bigger tyres is the bigger ground clearance under the diff

will that take 31s without rubbing everywhere?

As as been said, the reason for bigger tyres is to give you clearance under your diffs.
The larger the tyre the higher the ration of your gears and the more work your engine will have to do to get the car to go and the more you'll have to slip the clutch.
This is made worse by the Jimny transfer box's low ratios being too high in the first place so you WILL need a Rocklobster to reduce you low box and it will slightly reduce you high box. The experts on here will tell you how much - I was told by Rockwatt but I've slept since he told me.
It seems you'll have the clearance for 31"ers but you need to be able to turn them too!
235/75/15's are quite wide and thus catch the body more than slimmer tyres but it sounds like you've been at it with the cutting disc!
As has been said - Insa Turbo come up large but there are other brands - like Malatesta etc.
Tyres Direct's website is a good one to see all the different brands and I bought from them on the phone with no issues. Always call to make sure they have them in stock before spending your money!
Even if you don;t buy from them, their website is good at showing what you can get hold of for roughly a competative ish price!
