If it suddenly breaks, go back to the last thing that you did before it broke and start looking there

I had a Terrano (Ford Maverick actually) 2.7TD.
Cruised at 80 no problem, did about 33-35MPG.

Mine sits on 100kph (60mph) @ 4,100 revs and is happy to do that for thousands of k's with only stops every 500-550k's or so for fuel. It takes forever to get anywhere here in Oz. Cruising around town it depends on the speed limit which is mostly 80kph (50mph) and that is 3200 revs in 5th.
The Jimny is happy reving freely (motorbike heritage), what is doesn't take kindly to is lugging. Ie don't let the revs drop, keep 'em up by changing down and the car will run forever.
I think that your main aim with the Jimny should be to enjoy the trip, not worry or concern yourself about speed and revs. You will tell by ear how happy the Jimny is and what revs/economy it is happiest with... it is alive ya know. Not an inert lump of tin and plastic like lesser beasts.
