I could but wouldn't a straight pipe be better for airflow?
I could get a 100 cell cat but that would still block flow a bit wouldn't it?

It's only the second O2 sensor that is the problem, you still need your first sensor.
If your de-CAT exhaust has a hole for the second O2 sensor (it might not) then
- fit it with an adaptor so it is away from the gas, then it will give a suitable reading to the ECU; or
- fit a dummy (de-CAT) fooler sensor, about 20 Euro
Will you get a CEL?
Not sure if the Jimny will give a CEL for a second O2 sensor missing, it will give an error code, but might not light the CEL, it depends on the year, which market the Jimny was made for and what the regulations in force at the time.
Will a CEL be a problem?
It won't stop the engine from running correctly or go in to a safe mode for an O2 sensor fault. However, the CEL on all of the time will be a right pain, plus if another [more serious] fault occurs you won't know.
It might also fail your equivalent of the [UK] MOT.
Will I have 2 O2 sensors?
Depending on your model, you might only have a pre-CAT O2 sensor, in that case you don't have a problem.
Finally from 4x4community.co.za they say
With all de-cats the white wire from the engine side must be earthed. This should solve the cat light coming on.
Not sure if this actually works.
It might be worth starting a new thread on here, say 'How do I de-CAT my Gen3 Jimny?' I am sure someone will have done it and know what you need to do.
