I have looked on the shop, couldnt seem to find what i was looking for.

Ive seen boxes of them in different sizes in screwfix, surely as long as i use the correct size some of those should suffice?

It depends, if they are intended for light plumbing use, they might not be up to oil contamination and temperatures of the transfer box.

I have a set of O-rings from either Toolstation or Screwfix, and it says "Not for potable water ", not sure why else they would sell them?

Most likely they would have to pay some reputable lab to make documentation that the rubber do not release harmful chemicals.

Asbestos have been prohibited in most grown up countries since the early seventies(?) but at work we still we have to buy a declaration certificate from a company submitting these things that states our products (of course) do not contain Asbestos. 

plain ordinary NBR rubber should be fine for the transfer case O-ring.
havent tried potable water but it would most likely have the same effect as muddy water and that is very bad for your transfer case.

The Oring size looks to be inner diameter 19.5 to 20 and section 2.5mm
