I took a different approach for the rear side mounts, any load is spread across the mounting hole more now.

Also in the rear footwell.

would be an ideal rear lash point for a fridge.

Good job on the rear footwell anchor bar! Indeed it is a nice solid way to anchor that end of the fridge, I will see if I can do something like that here too.
