took mine off completely on the deck

Likewise. Jacking one side up will put tension on the drop links making them harder to remove. No need to remove tyres either! They are easy to get to. Older ones have flats on the ball side for a 14mm spanner.

Should the drop links be changed in pairs, or is it OK to change just the worn out one?

Just change the one you need.

A lot of drop links have an allen key socket in the end of them to allow you to lock them and undo the nut. The hole is often full of mud and therefore hidden but it can be cleaned out with a screwdriver and makes undoing them easy.

It is a suspension component that if missing, and fitted as standard should get you an MOT failure ;)

If it suddenly breaks, go back to the last thing that you did before it broke and start looking there :)

You might choose to put it on at mot time!
