Hi,
The diameter of a 195/80/15 tyre is more than the standard 205/70/15 tyre,
it increases from 668mm to 693mm, will this increase cause any arch rubbing or clearance issues on my standard jimny? (on lock and off road articulation etc)

Yes they are fine. That's what I am running on standard suspension....

i also run 195's . mud terrains will come out with a bigger diameter. they will affect the gearing.
