Think you might be better going a rotary engine But seriously, the Jimny is well set up as it is, nicely balanced and the right amount of torque. Chucking a V6 would defeat the whole purpose of the lean mean off-roading machine. IMHO
Nonetheless, quite a few downunder have put 2L motors in and 1 has put 2.7 V6 from a wrecked XL7 Suzi. I think that if one has the money and the inclination one can do almost anything. I'd stop at the 1.6 conversion, cheap easy and no mods.

The essex is massively heavy - from our experience with kit car jeeps fitting loads of weight up front does not do anything positive for handling, if you want more raw power there must be lots of more modern, lighter and compact engines to choose from.
If you happen to have an essex kicking about sell it to someone with a speed boat or a ford capri!

Anything can be fitted with the right skills or money. The essex is a great engine and fitted in everything, especially kit cars for years but its heavy and not particularly powerful.
Light and powerful would have to be a vauxhall xe lump, 2 litre redtop = 130bhp. But as others have said the 1.6 conversion would provide plenty of poke for the little zuk.
