Does anybody know if would have to trim the arches if these were fitted to standard steelies with a 3inch lift, or would i need a 4inch lift?

I dont think you would need any lift
Stock 205 70 15 = 26.3"
215 80 15 = 29.5"
Thats only 1 1/2 " more from the hub centre

I've got a 3" lift on my Jimbo and when i put some colway 215 R15 (which are 215/80x15 size...height 29") muds on the rims they definitely were catching the arches when i was cornering. It wasn't on every corner i took but seemed to be if the corner had any lumps or bumps to it.....then i got the buzz sound of rubber on plastic. Off road would be a nightmare, so i trimmed the corners back on the arches and everything seems ok now. I've only done some easy laning with them so far, so i could still get rubbing when i do some more technical tracks which articulate the axles more.

Hope this helps
Mark

Yes you do. These are what I run with a 3" lift.

Ideally you need to cut or fold the lip on the front wings and cut back the plastic wheel arch on the front so it has no lip.

On the rear under full compression my tyres were right upin the arch touching the inner arch so I had some bump stop extensions made up and welded onto the rear axle 2" higher so they meet with the bump stop before the tyre touches the inner arch.

This was with knackered old springs and with my new ones it might nor be so bad on the rear but the front would till need trimming to stop catching.
