Hi Gaz, welcome to the fold 
you won’t regret buying a Jimny, they are very capable and with a good set of all-terrain tires you will be fine for light off-road and still be usable on the road.
Have a good search around the forum as there is loads of advice on here.

I do exactly what you are asking with a 'normal set up', crossing fields & muddy tracks is what the Jimny does best.
