Just take the cat off and while you're at it take the baffles out of the box. When it comes to MOT time just find out where the local boy racers go :D

I removed my standard cat (the Jimny one is 400Cpsi) and fitted a 100Cpsi cat for around $160 fitted. The difference is amazing, the sound is brilliant and performance much enhanced with 100 large cells per square inch instead of the standard 400 cells per square inch.

If you mean the free flowing cats, this company does them.

I'm not saying they are the cheapest, just to give you an idea as to what you can get.

Just do a Google for Race Catalytic sports converters or similar.

It always sound worse than it is inside the car. Usual places for them to catch is the radius arm mounts and the diffs of course. Just pushing through mud where its sitting on the diffs will be fine as long as it doesn't hit anything hidden. A lot of the shortcomings can be overcome with a bit of thinking ahead.

A lift will do you no harm and will allow you room for taller tyres but you need serious rubber to gain any more height under the diffs. The lift will still leave you hung up on the diffs. IMHO just the small lift and tyres combination i have has made the truck no more capable than it was already( but it looks B) ) just mud terrains on standard height would have been enough for what i do. The times i've struggle have been traction related not height.

I think it is always worth getting a transfer box guard as this can be vunerable to breakover impacts otherwise as mcjimny says you just hit the radius arms or bottom of the diff housing
