As it says really, looking at a set of 7 x 15 rims for my winter set on an 08 Jimny and not really sure what my tyre size options would be?

yes, 31x10.5x15's will fit.

Is it lifted ? 215/75 on 7x15 on mine and couldn't let the jack down with out hitting the front bumper with stock suspension.

Not lifted, I was really looking for standard winter tyres rather than anything particularly large/wide so think maybe these aren't for me...
