If and it's a big if, I lost faith in Google maps, which probably has nothing to do with it not knowing what the actual car speed limit is instead of the truck one, what are my options. Probably a dash mount screen, definitely with live traffic and scamera van and fixed sites including average, ai, etc also preferred over air updates. Selectable voices might be nice too.

I have used quite a few sat navs in my time and have a preference for a built in one, some do have live traffic, the ones I had in the BMWs I had for example.
However, looking at your requirements you will be hard pressed to beat Google Maps, in fact I use it anytime I want live traffic as the in built Jimny sat nav doesn’t have live traffic and neither does my other car, so used Google Maps on my phone this morning to get round Newcastle/Gateshead western bypass, which currently resembles a car park at the moment.

I prefer to use Waze than Google Maps, the only advantage for GM is the off-line maps you can download, then you don't need a data signal just GPS. Waze needs a data signal to plot a route, but the live traffic updates are better I think.

Just got lost in sweden some where from either me or Google maps being stupid. Or me being over 50..drove up and down this little valley for almost an hour while it flipped between 1 hour and 42min to my destination. before closing the app and selecting the camp again and this time only 38min to the destination.
Been using a hiking app for Norway and Gaia GPS for sweden. Google cant quite cope with me only selecting detours or tracks or back roads.
Some use garmin overlander and like it, but it is not plug and play in europe, you need to hack the Maps to get fully detailed.
Been testing DMD2 app, thinking I might buy into it...

Ok so having looked at this more it seems that a garmin is kinda out as they are determined to talk to a smartphone to get live updates to traffic etc. Tomtom is not that much better as they want a subscription after 12 months certainly for scameras and depending on model all live information too. So this leads me to the next stage, is the live information on the tomtom sufficiently superior to Google maps to justify the subscription which by the way they are not particularly open about costings of, seems to be around 35 quid a year possibly? It's just as I am getting old I am finding the intrusive nature of my smartphone to be less and less wholesome, they were supposed to be a tool to help not a toy to distract.

I downloaded the Speed Camera Fixed and Mobile + Red Light cameras from a web site (speedcams.co.uk £9.99) and installed these in the inbuilt Jimny Sat Nav. I know this still doesn't give you live traffic, but it is an option. This is a one off payment for the current database, but it doesn't change very often and you can get a discount on an update.
Apparently 95% of all speeding fines are now from the Mobile camera vans, with hardly any of the fixed speed cameras now been maintained, although that might vary from by authority.
The Red light cameras are still been maintained, especially at level crossings.
You tend to know where the cameras are, even the mobiles on your regular routes, it's when you go somewhere different, it comes in to it's own and I find live traffic much more useful.

Been thinking more on this and been using Gaia GPS and I think for the mountains and out and about that one will suffice.
For the streets and highways I think Google will do. speed cameras and such I do not need. if I see how many fines I got the last 30 years and splite them up to how many months I have driven then the monthly fee for the speed camera warning is about the same as my fines.
But for the Gaia GPS I think i would like to use an old phone or a cheap android tablet but I havent found one yet. The new ones are most often way too large and/or way too expensive. Wich bring me back to considering other alternatives again. That is me in a nutshell very undecisive.

Most people use Google Maps or Waze simply because almost everything else requires a subscription for live traffic. This includes most built-in satnavs, which could be great (heads-up display, dead reckoning in tunnels) but are largely pointless as they don't normally include free live traffic.

There is a Lenovo tab M9 that doesn't cost too much, will check out some tests to see if it is ok for this. It can also be used for other stuff on the dash like OBD2 info and spotify and whatever. But might just be too big for the small Jimny dashboard.
Not to keen on changing the Stereo for a 2din android head unit.

As with a lot of people in the UK I wouldn't too bothered about scameras if it was just a fine but unfortunately they come with an endorsement of your driving licence usually but not necessarily 3 points and once you get 12 points you get banned from driving for however long. In the meantime these points stay active for 3 years, can be removed after 4 years and yet the insurance company wants to know if you had any in the last 5 years and at each turn it costs you more money so if you are lucky and get a basic 3 point and 60 quid penalty by the time you're entirely free from it's effect you could potentially be looking at a thousand pounds with the cumulative hikes in premium and fees. So in reality it is useful to know where the vans and fixed site cameras are likely to be.

I had up to two points, but they go away after a while like yours. 6 points and I would be out fo my license.
But the insurance companies in your country seem to have too much power to get hold of that info.
Money should never be above the law that protects the people (not the money), and everyone is innocent until found guilty and there is a difference between a fine for breaking a rule and getting a conviction in a court for breaking the law.
Here we would never allow that companies get hold of that much info on a person, but seems they still make money here without it. My insurance company pay dividends to the customers once a year. Some years I get up to 500€ even with my two points.
