I have about £1000 to spend on modifying my standard Jimny. ie: lift kit. I have some wheel spacers but they are not fitted yet. I would like to do a bit of off-roading but it will be mainy used for commuting. Any ideas anyone?

I would go for a 2''/3'' lift kit ,castor correct bushes, some decent A/T tyres & a steering damper and some under body guards, probably do you for the time being . it gets very expensive.
Personally, I would get a rocklobster box fitted, go +2" on springs and shockers, set of spacers, fit a set of 215x80x15's or maybe 31x9.5 or 10.5 tyres, adjustable pannard rod & steering damper

What A/T tyres do you recommend? I live 10 mins from Tong. I used to go to the pay and plays with a bobtailed rangerover now I have the Jimny. Tong can be very muddy, so I need something that can mud plug and be ok on the road. Not too bothered about the noise, mines on bridgestones and they are not exactly quite.

for Tong I'd go for Kuhmo KL71's and still be good on road
