I Can't recall I've seen any way to add opening rear windows to a Jimny. I've not seen a DIY fit universal sun roof since the 80's, when I fitted one to my Escort. But everything's possible, so you may need to get creative and makes you own. How about a"hole in the roof" with tonneau cover, possible garage or DIY modification?
I am thinking a convertible Jimny may have been a better option, cheaper to swap?
Finally a use for a Jimny with a lift

There is nothing I read in the question that jimmysteel asked that would lead me to believe that he is asking for guidance, or has plans, to do anything that is illegal. Personally, I see little difference, within the boundaries of the law, in hunting from a parked car rather than a hunting blind or stand. Joking comments excluded (Scimike), I don't understand why forum members don't leave comments that appear to be judgemental at the door.
I wouldn't have bothered replying except that when I joined this forum, people were polite to each other. Even if there was a disagreement, the reasons would be stated and handled with respect. I worry that, as more time passes, these discussions will devolve into the same kind of arguments and insults that are common elsewhere.
I started out with nothing & still have most of it left

Most cars already have rear windows and many have sunroofs, so refusing to advise on such things for "ethical" reasons is beyond daft.

I just slowed down and let them get on with it. Neither seemed to get hurt and my turning was a couple of miles further on.
