Just for reference, the floorboards in my vintage MG were originally 7/16" Birch Plywood and designed to take the weight of a human and the seat and can easily withstand being stood on without the seats fitted - those boards resting on the chassis rails are quite literally the only thing that separates your arse from the surface of the road(!)
So 12mm Birch-ply could prossibly be regarded as a bit OTT for the purpose of the rear flooring in the Jimny

Quick question on this subject, if you remove the back seats does it affect the MOT at all?

Hasn't been an issue with the 3 I have removed the seats from over the last 16 years. That said I have always removed the rear seatbelts too as I once had an issue with having only half the belt fitted when I had a Subaru I stripped down for rallying.

One of the last 200ish of the gen3s, probably.

As above...... never had any issues 
was given advisory when belts where still in (no rear seats fitted)
now all boarded out and changed my V5 to 2 seats
