Like you i don't want to have to spend all my time patching it up in a few years. Ideally i hope to be able to keep it for the kids and i to use as a toy in the next few years so don't want it turning into a ball of rust.

Nope, that finish was achieved in a few hours with a bucket of soapy water and some scotchbrite.

On large air con units a build up of deionised water forms as condesation inside the depths of the units this causes alot of rust and failure of parts ,
A way to combat this was borrowed from the shipping industy
A lump of sacraficial zinc is used this takes the brunt of the corrosion leaving the mild steel virtually untouched

I wonder if this can be implimented onto a chassis or bodywork

Yes, it is called galvanising

The lumps of metal dont work on cars like they do on ships because the whole gubbins has to be immersed in electrolyte. If it did work, then your aluminium gearbox casings should disappear, and the steel bodywork would be fine, as the engine & gearbox are electrically bonded to the bodywork.
